Our 100% cacao chocolate bars are made from the cacao beans of the Ancient Nacional variety, but that is where their similarities end. Each carries its own richly compelling flavor profile and story. For instance, our 2018 Rain Harvest is from an unusually dry and cloudy growing season, giving the cacao a more robust, nutty, chocolatey, and floral flavor profile.
The Story Behind To’ak’s Cacao Chocolate Bars
Ancient Nacional is one of the rarest and most celebrated cacao varieties in the world. It was believed to be extinct until recently, when To’ak discovered old-growth varieties in Ecuador’s valley of Piedra de Plata. Upon testing, these varieties were confirmed to be 100% pure Nacional, now designated Heirloom by the Heirloom Cacao Preservation Fund.
We use Ancient Nacional in our cacao chocolate bars. This is but one of many reasons why we offer the most expensive chocolate in the world. We also work with local cacao growers, the rainforest conservation foundation Third Millennium Alliance, and universities and research institutes to preserve the pure Nacional genotype.
