Tasting Guide

Pairs Well With

Wine

Wine

One direction is to pair this with sweet fortified wine—especially Pedro Ximénez sherry.

Whisky

Whisky

Irish whiskies and sherry-finished single malt Scotch whiskies

Other Spirits

Other Spirits

A relatively sweet spirit like Zacapa 23 rum is another great pairing, as is cognac if properly aged

Cheese

Cheese

Brie, Manchego, aged Gouda, Comté, and Gruyère. This chocolate paired with cheese accentuates the nuttiness of both.

Tasting notes

Tasting and pairing dark chocolate is a sensory, social, and culinary experience. We offer an in-depth guide to the entire process.

Sustainability and Certifications

Our cacao comes from non-certified organic farms. We personally know each of the farmers and their farms and conduct several monitoring visits per year to ensure no synthetic or chemical inputs are used.

To'ak has long gone well beyond Fair Trade, paying up to 700% above the local market price for wet cacao. While cacao prices are always fluctuating, To'ak continues to pay the true cost of cacao.

Your purchase supports our work in regenerative agriculture and heirloom cacao conservation. Cacao sourced from Piedra de Plata is certified Heirloom Cacao by Heirloom Cacao Preservation Fund.
