🌟 To’ak Chocolate Cake We made an delicious cake made from deforestation-free chocolate 🎂🍫 ☝️ Ingredients: • 200g salted butter • 150g 65% To’ak Chocolate Rocks • 50g 100% To’ak Chocolate Rocks • 50g plain pasta flour • 6 eggs • 200g sugar • Sprinkles of cacao nibs ✨ Steps: 1️⃣ Preheat your oven to 180°C (350°F). Prepare you mould with butter and flour. 2️⃣ Melt the chocolates with the butter in a bain-marie. 3️⃣ Separate the egg whites and the yolks. 4️⃣ Start beating the yolks with half of the sugar until creamy. 5️⃣ Beat the egg whites with a sprinkle of salt and some lemon juice until the foam is tight, yet creamy. 6️⃣ Add the foamy yolks on the melted chocolate with butter, integrate gently, then add the flour. 7️⃣ Add a bit of the whites to lighten the mix, then pour the mix over the whites. Mix gently until homogeneous, making sure it does not deflate. 8️⃣ Pour two thirds of the batter in your cake mould, and keep the rest in the fridge. 9️⃣ Bake for 25 minutes. 1️⃣0️⃣ Take out, add the rest of the batter, and sprinkle some cacao nibs. 1️⃣1️⃣ Put back in the oven for 10 to 12 minutes to crust and warm up the batter. Everyone in my family had a favorite. There's enough chocolate in each sampler for about four people to taste each flavor perfectly. It wasn't love at first bite, but rather a gradual process. Our favorites were TUCUPI, AMAZONIAN ANTS, and RAINFOREST NUTS. Keep in mind that what one liked might not be the same for others.

Regenerative Cacao that Supports Conservation

We’re using cacao trees to help restore forest on degraded agricultural land. It’s one element of a holistic regenerative agroforestry project that combines cacao trees with a diversity of tall native shade trees, fruit trees, and other food crops like bananas and plantains.

We’re doing this in partnership with TMA (Third Millennium Alliance), a nonprofit rainforest conservation organization that has been protecting and restoring forests in Ecuador since 2007.
