Very waxy consistency. Not what I expected from such an expensive product.

Pure chocolate bliss

From bean to bar straight!

And I thought chocolate making was all about conching.

Excellent as always

Smell: warm, full, and yet hollow. Maroon instead of blue, sort of cauldron-shaped. The crack of a baseball bat.

First melt: Stalactites. Cenotes. Light shimmering on the cave ceiling from the single sunbeam stretching down to the slow-shifting waters. Limestone. Echoes. Shadows. The sun beats down, hot and oppressive, but not here.

Second melt (I could not help but chew the first): Soft buttery dinner rolls. Simple, non-majestic sunsets. The last class of the day before spring break. Melancholy and wistfulness fringing around the edges of a solid, central hopeful happiness. A change that is an improvement, but is nevertheless a change.

Third melt (a larger bite this time): I am ready to graduate elementary school, but sad nonetheless; I am glad that my brother is two years behind me, and thus I will still have an excuse to visit. I return to Ms. Greene’s class with towels, hoping to sew a stocking for my mother’s December birthday. I am standing in the space between spaces, filled with a content wistfulness, a moving-on from one good thing to another.

I didn’t say hardly anything at all about the taste. It was good. It was To’ak. It’s never not going to be good.

Sustainability and Certifications

Our cacao comes from non-certified organic farms. We personally know each of the farmers and their farms and conduct several monitoring visits per year to ensure no synthetic or chemical inputs are used.

To'ak has long gone well beyond Fair Trade, paying up to 700% above the local market price for wet cacao. While cacao prices are always fluctuating, To'ak continues to pay the true cost of cacao.

Your purchase supports our work in regenerative agriculture and heirloom cacao conservation. Cacao sourced from Piedra de Plata is certified Heirloom Cacao by Heirloom Cacao Preservation Fund.
