About To’ak ROCKS

What makes ROCKS different?

ROCKS are untempered, un-conched chocolate, an intentional rebellion against conventional chocolate craft. This approach preserves the raw, full-spectrum character of Ecuadorian cacao from the same historic landscape that gave rise to Ancient Nacional, resulting in an intensely expressive chocolate unlike anything you’ve tasted.

What’s the texture like?

Crumbly at first, then silky as it melts. The texture is mineral and irregular, like volcanic rocks, giving way to a smooth and layered mouthfeel that slowly reveals flavor as it melts.

How do you source the cacao?

We work directly with regenerative growers in Manabí, Ecuador. Our cacao is Ecuadorian Nacional, descended from one of the rarest lineages on Earth, and is sustainably harvested, shade grown, fermented, and roasted with extraordinary care.

Is To’ak ROCKS raw chocolate?

Not exactly. While it’s minimally processed and not conched or tempered, it’s still gently roasted to develop aroma while preserving the cacao’s natural properties. Chocolate at its most essential.

Are To’ak ROCKS healthy?

ROCKS are made with only two ingredients: heirloom cacao and organic cane sugar, preserving cacao’s powerful health benefits. Cacao is naturally rich in antioxidants (especially flavonoids), which support heart health and reduce inflammation. It’s also a source of magnesium, iron, fiber, and mood-boosting compounds like theobromine. Unlike conventional chocolate, ROCKS skip conching and tempering, helping retain more of cacao’s natural nutritional properties. Due to the sugar content, we recommend consuming ROCKS with moderation.
