Our cacao comes from non-certified organic farms. We personally know each of the farmers and their farms and conduct several monitoring visits per year to ensure no synthetic or chemical inputs are used.

Pure dark chocolate from the valley of Piedra de Plata spent time in an ex-Don Julio Tequila oak cask.

Oak Cask Aged

While any sense of tequila had mostly vanished, the vessel’s woody aroma of oak served as a beautiful complement to our 2018 harvest, To’ak’s boldest edition yet. The aging process further highlights the cacao’s rich notes of roasted almonds and tobacco, with a refreshing hint of grapefruit.

Regenerative Cacao that Supports Conservation

We’re using cacao trees to help restore forest on degraded agricultural land. It’s one element of a holistic regenerative agroforestry project that combines cacao trees with a diversity of tall native shade trees, fruit trees, and other food crops like bananas and plantains.

We’re doing this in partnership with TMA (Third Millennium Alliance), a nonprofit rainforest conservation organization that has been protecting and restoring forests in Ecuador since 2007.
