Our cacao comes from non-certified organic farms. We personally know each of the farmers and their farms and conduct several monitoring visits per year to ensure no synthetic or chemical inputs are used.

With its figgy, creamy aromas, this ex-bourbon, ex-maple syrup cask inspired us to create a drinking chocolate with a wintry spin. After aging for three years in the barrel, our 2021 harvest was then amplified with a full-spectrum blend of cardamom, cinnamon, star anise, black Kampot pepper, and malva flower.

Regenerative Cacao that Supports Conservation

We’re using cacao trees to help restore forest on degraded agricultural land. It’s one element of a holistic regenerative agroforestry project that combines cacao trees with a diversity of tall native shade trees, fruit trees, and other food crops like bananas and plantains.

We’re doing this in partnership with TMA (Third Millennium Alliance), a nonprofit rainforest conservation organization that has been protecting and restoring forests in Ecuador since 2007.
